I'm not sure if it's right or not, so before I give it to I just wanted to double check with anyone who has done this before...after the 36+ hours that I allowed it to ferment, there was white stuff (culture?) on the bottom of the jar. and even though I attempted to strain it through part of my juicer before putting it in the jar, I still managed to get little bits of the coconut in there.
