My GOD !!

What have I DONE ???

I made KT out of SOME kind of tea (I have about 15 kinds all on the kitchen

floor....

no room in refrig and wife would kill me anyway)

SOMEHOW I made a KT like Doc Sklenar's KT and I dont even know HOW I did

it !!!

It HAD to rest for 3-4 weeks on the kitchen floor, then 1 week in the fridge

......Amazing

fizz and amazing flavor......damn.....

NEXT TIME...........>>>>> TAKE NOTES !!!!

It's so funny that you said to take notes. What I'm doing is making different

batches with different porportions, and writing out what exactly I used. Test it

through the fermentation stage, and then try to perfect it. I just did a one

gallon batch, four Liptons, four organic green teas, 1 1/2 cup of sugar. We'll

see. My second brew tomorrow might be all green tea. I want to see what works

best, and will have the " recipe " and the start date of the brew at the base of

the bowl/jar.

Hi!

I take notes but... sometimes I use the same mix of teas, the same

amount of sugar, and the taste can be really different. KT is really

amazing! (Maybe I could note the phases of the moon? Or the

atmospheric pressure? I note already the daily temperatures...)

sounds strangely familiar ... except that my husband wouldn't kill

me, he just drinks the brew....lots of it ;-) even lesser brews!

I make jottings on little sticky notes and plaster them on a brew,

or sellotape a paper on the kitchen cupboard just below the brew

with info like

day and date of start of brew

types of tea used (proportion of green to black or others used)

any extra fruity teas added and how much

I keep the sugar pretty constant at around 400g (1 3/4 cups) per

1 US gallon/ 4 litres

Even as I keep my brews pretty similar, outcomes can vary greatly.

Each brew is usually o.k. but only occasionally heavenly.

My husband says,'It's the way you hold your feet, dear!' ;-)

Maybe, if it was always so mega, it wouldn't stick out as special any more?

Now ...... what WAS that heavenly ingredient, I wonder?? .....;-)

Maybe, naming that extra wonderful batch after your wife might

get her on your side :-) ?
