When I used my German sprouter (purchased very economically at Goodwill), likewise there's little to no air circulation either. Yet my sprouts turn out well, *except* for that bad batch of adzukis several weeks ago - went to mold, even though the other spouts in the tray below it did well. Weird. I've also sprouted in stainless steel strainers with plenty of air circulation and that went well. It's a conundrum I'll have to ponder more, LOL! Could be there's someone else on the group who has been insight by which to 'air' this topic, LOL!! Good luck with this new batch!! This morning at 6:30 we had SUCH A DOWNPOUR, it woke up the whole neighborhhood. Now the sun is coming out. I think it's going to be a hot day. Through the years I have had to minimize my sprouting during the summer for heat and humidity reasons. Over the twenty years I have been sprouting I have tried all sorts of different things some work some do not. What has worked has been to stick with the more hardy sprouts...fenugreek and lentil mixes in particular. As mentioned, use less seeds so the sprouts are not crowded in any way. I do not stack or cover sprouts in the heat, to much heat and humidity that way. I run a fan in the proximity of my sprouting area to keep the air moving. You can do the smaller seeds but keep it sparse. I also heavily rinse with a sprayer not just dunk and water. Less chance for any nastiness to accumulate. I have also found that micro greens grown on soil or planting medium do fine in the heat if once again, I do not seed heavily. Probably the best advice I can give in your case would be to NOT stack your trays and put a fan in the area you sprout. Now I have never put them in the fridge.
