Guest guest Posted February 21, 2006 Report Share Posted February 21, 2006 On the green vs. black debate, im only on my 7th batch now, but have found half green and half black to be my favorite mix. With the one batch I made that was all green tea, I hardly got any SCOBY at all, just a very thin slime.. but with the half and half it makes a nice fat one within only a few days. Regarding fizz, I found that it pays big to just be careful when bottling so as not to LOSE much, rather than trying to build it back up after bottling. My first two batches lost all the fizz when I strained them through cheesecloth.. But the last few what I do is remove the SCOBY, pour CAREFULLY into a pitcher, then strain as im filling the bottle with a soup-skimmer that I attached a funnel to. I put the bottle in my dish rack so it leans at an angle, further reducing the splashing as the bottle fills, again, to try and preserve as much fizz as possible from the original ferment. With this new method, I find I can put the bottles straight into the fridge and have plenty of fizz for drinkin.
