Why Tea?

Hi all KT Experts

After reading many past posts, I understand the sugar is food for the

culture to grow and fermenting bacteria. A Newbie question: why use

tea? Can one use just sugar solution?

Ginger, The culture also needs the nutrients from tea, e.g. nitrogen,

quite apart that depending what tea you use you get a particular

flavour of Kombucha tonic. Without thea the Kombucha would not be Kombucha.

It is therefore often called 'the wonderful tea beverage', or

'the divine cha'...'cha' meaning 'tea' in the Asian languages.
