I use brown sugar and sometimes add some process white. It works just fine.

Using organic cane sugar should be just fine. Just make sure to use CANE sugar,

not a sugar substitute.

Raw honey & malt is OK to use in kombucha. Dom (kefir) has this on his

website.

I use raw sugar, which isn't as highly refined as white sugar.
