Guest guest Posted January 12, 2006 Report Share Posted January 12, 2006 I just wondered,if i need the double amount of starter (400-500 ml) for making 4l of tea (using a 5l jar)? Furthermore:What is the minimum brewing time? our 2nd lot is brewing now the 4th day ( just put in a 3rd)and we have ran out of kombucha.We have a good temp. in our hot water cupboard and it has already formed a scoby.I haven't used very much sugar.I know the scobies shouldn't be disturbed,but my family here is quite in anticipation. Yes, , it would be advisable. I would have thought 6 days is a minimum. I brew mine longer, at least 8 days, but my temperatures are lower, about 65 F/ 18 C on average. Do try your brew on day 5 and see what your tastebuds say. A straw is a good utensil to use and leaves the culture relatively undisturbed. Watch out for good acidity which carries the health-giving properties. I use about 90grams per litre (about 3 oz). You say you don't use a lot of sugar. How much do you use? The sugar IS important. It feeds the Kombucha culture which transforms the sugar into healthy acids. I let several brews ferment at different intervals, so I'm never without the wonderful tonic. You will find out how much to brew for your own personal needs and how to space the brews so that you never need go short.
