I am having way too much fun with my food

Off of Russel site.

For the tortilla

3c peeled courgette (zucchini)

3T olive oil

2t lemon juice

Pinch cayenne

1t ground coriander

1/2t salt

1/2c flax meal*

• Blend all ingredients in a high-speed blender until smooth.

• Add flax meal and blend again until smooth.

• Pour mixture onto 2 dehydrator sheets and spread evenly into a circle on

each.

• Dehydrate for 8 hours at 105 degrees F, or until able to peel of the

sheet.

• Once the dehydrator sheets are removed, return to the dehydrator for 30 –

60 mins, until both sides are dry to the touch but still pliable.

* Flax meal is flax seed that have been ground in a coffee grinder or

similar, to produce a fine flour.

The first batch I made identical to the recipe, the second batch I used a

Serrano pepper rather than the coriander. I did not get the tortilla's out

of the Excalibur right at 8 hours. I had to flip them too soon and they

buckled a bit, then I did not get up in time to get them out on schedule. I

spread my wasabi creme cheese on the biggest fluffiest one which was a

Serrano, then I covered it with my French Garden sprouts, rolled it up and

took off for work. It was so divine. I am making one today with the

chipotle creme cheese. I will try the jalapeno creme cheese tomorrow. Even

tho I got them too dry, the creme cheese softened them up and they were like

biting into heaven.

*Raw Cauliflower Popcorn

*

*Ingredients:*

- Cauliflower (1 whole chopped in popcorn size pieces)

- Nutritional Yeast (a whole lot, just pour it in, maybe 4-8 heaping

teaspoons)

- Sea Salt (1/2 teaspoon or more, to taste)

- Black Pepper (just shake it on)

- Olive Oil (1 teaspoon)

- Water (just a splash)

- Optional: Spirulina (make it green, 1-3 tablespoons)

- Optional: Coconut Oil (just a teaspoon if you want some coconut flavor)

- Optional: Cayenne (only if you are hardcore)

*Directions: *

1. Measure and prepare all the ingredients for the Raw Popcorn and put in

a gallon size zip lock bag.

2. Now shake that bag until your arms hurt.

3. You can make it cheesier by adding more yeast, greener by adding more

spirulina, and sticky by adding raw honey (only do that if you are going to

dehydrate).

*Note*: You can eat the Raw Cauliflower Popcorn as-is, which I usually do,

or you can dehydrate it overnight and it will shrink up into yummy little

crunchy pieces. Be sure to go easy on the salt if you dehydrate as the

flavors will intensify.

This stuff is addictive raw or dehydrated. I love to snack as I drive and I

drive 12 hours shifts, so I am focussed on portable food. I kept all the

stems out and steamed them and ate them smothered in mushrooms and topped

with mustard and broccoli sprouts.

I am having 3 day old red quinoa sprouts for breakfast with blueberries and

kefir
