I bought my first box of Quinoa YEARS ago, and it says that right on the box.

It's a natural insecticide or something like that and the instructions say to

RINSE THOROUGHLY. But in my case, since I didn't like the smell, it was a one

time use.

I am however going to look into the red variety. But...they are quite high in

calories, no??

I never had it sprouted, but I have to agree that something about the taste of

the white Quinoa puts me off. I've tried it a few times knowing what a super

grain it is but to no avail. I'll have to try the red quinoa.

I just remembered why I didn't like the smell. It wasn't the COOKED quinoa, it

was the sprouted quinoa.

The newer quinoa on the market is pre rinsed-you can just sprout it, soak, cook,

or like me-grind it into flour.  No, quinoa is not high in calories, but it is

a complete protein in its own right-I add it to smoothies and baked goods.

How do I get away with using Panko? Because Melody watches 95% of what she puts

in her body and the other 5% is Panko or some other little nonsense. I enjoy

Panko coating on my chicken or fish but I do this sparingly. So when I do use

it, I enjoy it. It's a treat. And so far my blood sugar is cooperating. The

Fenugreek tea is a godsend. The other morning I got up my sugar was 72. I have

NEVER hit that number in my life. I range between an 80 and a 98. That's great

for me at my age. So Panko once in a while is okay.

But if I can grind the Quinoa and make Panko out of that, well I'll do that.

I have no idea what a grain flaker is. But if I can grind up the Quinoa in my

coffee grinder, would that work? And then I could bread my fish or chicken.

Holy cow, I could really do that.

Tell me if that would work.

and I just went online to see if I could use quinoa in place of, let's say, I

want to bread some chicken or some fish. I don't do that because I don't do

white flour. But if I COULD do white flour, I'd dredge the fish or chicken in

white flour, dip in egg, dip in Panko crumbs, and either bake it or fry it. But

I do this recipe and just leave out the flour part.

So can I do the following:

You can make beautiful flour with a coffee grinder (I do recommend having one

dedicated to just that purpose though, so it doesn't pick up flavors)  When I

was first diagnosed with celiac, I experimented with different grains before I

invested in a grinder, and the coffee grinder actually worked better than MOST

of the various grinders I have owned over the years (except for my Vitamix,

which is AMAZING)  I did all sorts of grains, nuts, seeds, beans, and rice in

the coffee grinder.  I would do several batches at a time and store it in the

freezer.  Worked a charm!   It's great that you can " treat " yourself to your

5 percent " not so good stuff " .  Being allergic, I can't!.  A grain

flaker/roller rolls hard grains into flakes, such as rolled oats.  It is an

attachment for my Kitchenaid mixer.

I was really thanking you because I found a new recipe there! I can't get enough

it seems. I will never live long enough to try even 1/100th of the recipes I've

copied and cut out and saved through the years, but I can't get rid of them. If

I'm ever bored (not often, for sure!), I love to get a box or book of recipes

and just read through them. It's interesting and relaxing. I could be the most

boring person you'll ever meet!  (It's OK if you agree - lol)

I don't have any gluten problems, and from reading your post, I gather I'm not

making any flour out of my oats either!!!!!

flour,, you need to make it from whole oat groats.  Many celiacs can't eat oats

because they are often cross contaminated with wheat, since growing oats is

I was just on the internet reading about this kind of flour and that kind of

flour and I happened upon Oat flour. I said " what the heck is oat flour? " and

the description was " take one and one half cup of oats, and grind and that will

make one cup of oat flour "

I have LOTS of oats in my house. I have made oatmeal cookies, made Alan oatmeal

(which he no longer eats because he likes other things). But I have a big back

of oats in my house. It says " Quick cooked Oats " and on the side it indicates

" one half cup has 24 grams of carbs "

I don't buy white flour, but I am going to go online and do some digging. Do you

think if I pulverize these oats, I can use this as flour. Is this high glycemic

or not?

LOL, Peggy-I must be even more boring than you.  I can't even eat MOST of the

things " normal " people eat, but I don't think twice about spending hours on end

looking at recipes and cookbooks!  There are worse things we could be doing

with our time, ya know!

I will go make a video JUST for you Melody, showing oat groats and grinding them

into flour.  After all, you make so many wonderful videos for us, it's the

least I can do!

True, , so very true. It's amazing what you can learn just from reading

recipes. I read cookbooks like a novel - open at page 1 and read all the way

through. I do cheat sometimes if the chapter or section holds no interest for

me, but even then, there's usually some tidbit to be savored (pun intended!)

LOL, Peggy-I must be even more boring than you.  I can't even eat MOST of the

things " normal " people eat, but I don't think twice about spending hours on end

Hi Lorri.

I might do an experiment. Making my oats into Flour. Not today. Today I made

about 30 meatballs, and a WHOLE POT LOAD OF HOME MADE ITALIAN SAUCE. I then put

individual meals (spaghetti and meatballs) into the little OSO fresh containers.

And they are in all my freezer. So whenever Alan wants spaghetti and meatballs

for dinner, I pop one out. Or if I just wnat a few meatballs, I pop one of those

containers out. I'm extremely organized as I get into my old age.

Melody,

If you give your rolled oats or even quick oats a whir in a food

processor you will have oat flour. I do it all the time. Oat flour is

one of my favorites for the rare times I bake anymore. Oat groats are

optimal but not required.

flour and I happened upon Oat flour. I said " what the heck is oat flour? " and

the description was " take one and one half cup of oats, and grind and that will

make one cup of oat flour "

I have LOTS of oats in my house. I have made oatmeal cookies, made Alan oatmeal

(which he no longer eats because he likes other things). But I have a big back

of oats in my house. It says " Quick cooked Oats " and on the side it indicates

" one half cup has 24 grams of carbs "

I don't buy white flour, but I am going to go online and do some digging. Do you

think if I pulverize these oats, I can use this as flour. Is this high glycemic

or not?

I didn't mean CANNED, I meant FRESH. You've never seen " HOARDERS "

These people save cupcakes and other stuff that should have died 5 years ago.

I know canned food stays. But who on earth keeps FRESH food, still in packages

(Not fresh, but packaged) you know what I mean.
