Guest guest Posted January 17, 2011 Report Share Posted January 17, 2011 I don't know that she is the originator as I recall seeing, Jacques Pepin on one of his cooking shows, years ago, demonstrating how to make kale chips in the oven at a low temperature.That being said, Rene has some great recipes and a lot of videos. She is an RN who puts a lot of time and effort into teaching about raw foods. She does sell her cookbooks and some food products but I have never found her off-putting or pushy with that. In fact, she can be very inspirational.Her Kale chips recipe is something i have been meaning to try.Here is the recipe (be sure to watch her video, just google it): Rene Oswald’s Crunchy Healthy Kale Chips1 1/2 c of sunflower seeds briefly chopped in the mixer60 large kale leaves minus the stem in hand size pieces in a large bowlDressing:1 large red/yellow/orange pepper in 1-1/2 inch pieces2 celery stalks in 1-1/2 inch pieces1/3 c sesame seeds or tahini1/3 c of nutritional yeast1/4 c fresh lemon juice1 Tbsp of curry or any other flavoring you want1 tsp cuminDirections:After chopping the sunflower seeds pour into a small bowl. Using the same mixer container, add the pepper, celery, tahini, lemon juice, curry and cumin and blend until smooth. Pour onto the kale chips and massage with your hands to coat the kale. Spread the kale out onto 9 teflex sheets (will fill 9 trays) as a single layer and sprinkle the sunflower seeds over the coated kale.. Dehydrate for 8 hours and enjoy!
