Guest guest
I've just read the posts on Essene and Ezekiel bread ... interesting. I've been eating 100% raw vegan food for several years and do like different sprouted breads. So much healthier than stuff that is baked. Someone was looking for a good cracker ... try flax. You use it soaked, not sprouted. (or it can be added to other recipes in ground up form as well). My basic flax seed cracker recipe is this: 2 cups flax seed (whole). I mix light and dark. Put in large bowl In a blender (I use a vitamix), put in 3 to 3-1/4 cups pure water (I use distilled) a chunk of sweet onion (1/2 small onion, or 1/4 large onion) garlic (I use a couple large cloves) 1-2 Hot Peppers (I use habanero, but I love very hot spicy things) 1/4 cup nama shoyu. This is raw soy sauce, but it does contain wheat, so it is not gluten free. To avoid gluten, you could use tamari, or some sea salt (1 to 1/2 tsps). I don't use Braggs as it doesn't have a good flavour. Anyway, blend it all up, pour it in the bowl of flax seeds, stir, and let it set for a minimum of 4 hours. I just do overnight or for a day. After sitting, the mixture will be very gooey -- so stir it really really really well. It should be the consistencey of pancake batter. If it it too thick, add a bit of water and stir. Spread on solid dehydrator sheets --- very thin -- score into cracker shape. Dehydrate at Under 115 degrees (I do mine at 95-100) 1 day, then flip over, remove the solid sheet, dehydrate 1 night ... and your crackers are nice and crispy and done. The thinner you spread them, the crunchier they are .. almost like chips. I drop the batter by large spoonfuls onto the solid sheets (instead of spreading it out) so I end up with round crackers. I love these crackers spread with sprouted sunflower pate (or any pate type spread), or dipped in salsa, or with avocado ... they are yummy. You can add veggies to the blender mix if you want --- gives a whole different flavor. I don't have the recipe book that was mentioned (Everything Raw by Mike Snyder) .... although I have heaps of other books. There are endless essene bread and cracker recipes. Also, the site goneraw.com is a great source for raw recipes.
