It may rise again before the brew is done, or may not. I did not pay attention to this. And someone else told me that 1 cup of sugar to 3 liters of tea, as I did, may not be enough. This morning, I moved my negative ion generator into the room, hoping that it will give the little creature a boost. Guest guest Posted January 4, 2006 Report Share Posted January 4, 2006 The SCOBY will be fine even with the other side up. It adapts, and sometimes they flip on their own. Margret flat says it doesn't matter. I use 1 cup of sugar to 3 liters tea that is a standard recipe and my KT makes me very happy. I will say that I remember someone maintaining that if the SCOBY sinks, a little more sugar will raise it. It's just that it doesn't matter if the SCOBY sinks. The film you see is indeed the baby forming at the top and sealing the vessel. It no doubt would be forming even without the negative ion generator.
