Yes, Mark, you could do that and have another regular brew, but if you think of holding scobys in a starter pot (extra acidic bacteria rich KT) Len recommends one should add more less acidic KT, because this discourages the yeast going over-active. Guest guest Posted December 18, 2005 Report Share Posted December 18, 2005 I'm an advocate of taking the SCOBY out of the brewing vessel, along with the starter liquid, putting in the sweetened tea, replacing the SCOBY, and pouring the starter liquid over the top and not stirring. Allowing the starter to stay at the top helps promote quick SCOBY growth and sealing, which protects against mold. I strongly advise people to follow this protocol because it works. If anyone has had mold show up, this is the protocol for brewing that will prevent mold.
