I too am sensitive to caffeine - but find KT doesn't bother me, unless I drink huge quantities and do not drink enough pure water... If it was the caffine there are ways to reduce the caffine levels in the KT, use decafinated tea, do a fast pre-brew with your tea, etc. I've tried the pre-brew and the KT does just fine. I'm considering making a decaf jar of KT on a regular basis for those evening KT cravings. Since I started drinking KT, I've lost my desire for coffee. When I first started drinking KT, I lost my craving for coffee and sweets. Unfortunately with all the holiday treats around, the sweet cravings are back again. (I think that my KT is even sweeter due to the winter brewing.) Let's not forget that the research on tea, and some on coffee even, show that it is a healthful beverage, and that's the caffeinated version they are testing. If one's only caffeine intake is KT, that's a good thing, not a problem, imo. KT has much less caffeine than regular tea because one is only using a small amount of tea relative to the amount of water. I still have my one cup a day of regular tea and I know others on the list do as well. In my own short experience with Kombucha (1 month), I have found that I am sleeping much more peacefully and waking rested and ready to go. Just out of curiosity, HOW MUCH CAFFEINE IS THERE IN KT? Have there been studies done which can show some numbers of caffeine in KT versus tea, coffee, etc.?
