Pure sugar or honey without nutrition is long term a deadly poison. Likewise for grain without sprouting and especially polished of bran, germ and vitamin and pesticide added for shelf life. Cooked food comes in degrees. Blanching and canning is essential as a means of killing deadly germs, virus, yeasts, parasites, and molds. Blanching removes a bare minimum of nutrition and enzymes and in primitive conditions (it's all primitive) saves many peoples lives yearly. Cooking varies from a quick blanch or steam or stir fry to cooking food down into an unrecognizable pulp. Cooking slightly should be contrasted to the long shelf life of foods transported from farm to plate. Long shelf life and genetic selection to endure the ride removes vastly more nutrition than slight cooking. Evidence of this is how sweet corn is picked and steamed and on the plate 20 minutes from the field and how bland it will be when not cooked until the next day or how yucky it is either purely raw or excessively cooked for 2 hours. I advise moderation between the poison of disease and cooking on the basis that blanching or slight steam cooking improves food vastly more than long shelf life harms live or dead foods. In other words, hardly anyone actually needs 100% of the most nutritious foods all of the time and hardly anyone needs to be sick even once a month. Addition support of this view is that world wide people survive on cooked food just fine, with gusto. Consequently, it's a matter of balance, and personally I favor blanching, slight steaming, and stir fry and avoid heavy cooking and heavy cooking oils.
