Again, fats stay in your arteries, liver, and slow down your brain. Oils are processed food. White bread has been demystified. Grab a fresh coconut and eat its meat. All enzymes are there. So an avocado. Nuts may still contain enzymes. Enzyme nutrition is very important. PROCESSED MANUFACTURED FOOD is toxic and carcinogenic. Trans-fatty acids (fast food/processed foods) are toxic. And, with all *due* respect to “Dr.” Cousens, he does not give good advice…more people get sick than get well on his 80/10/10 plan, including myself. Oh, he blames the individuals for not “doing it right” rather than admit his plan is unhealthy. 10% fat is not sufficient to allow the absorption of fat soluble vitamins. He is not the only rawfood “guru” to spout pseudoscience and nonsense…they all do because they learn it from each other…a nice little circle of wrongly-educated individuals. A WHOLE Foods diet (eating both cooked and raw) with optimal amounts of *complete* protein (in grams not percentage) and *optimal* amounts of healthy fat (25-30%) is the best most healing and life extending diet. And, that whole “enzymes preserving thing”…more bull. Whether the enzymes are denatured by the heat of cooking or by the acids in your stomach, they are nonetheless denatured. They do not assist in digestion. A healthy human body can produce it’s own enzymes for it’s full lifespan without “borrowing” from raw food. Pure sugar or honey without nutrition is long term a deadly poison. Likewise for grain without sprouting and especially polished of bran, germ and vitamin and pesticide added for shelf life. Cooked food comes in degrees. Blanching and canning is essential as a means of killing deadly germs, virus, yeasts, parasites, and molds. Blanching removes a bare minimum of nutrition and enzymes and in primitive conditions (it's all primitive) saves many peoples lives yearly. Cooking varies from a quick blanch or steam or stir fry to cooking food down into an unrecognizable pulp. Cooking slightly should be contrasted to the long shelf life of foods transported from farm to plate. Long shelf life and genetic selection to endure the ride removes vastly more nutrition than slight cooking. Evidence of this is how sweet corn is picked and steamed and on the plate 20 minutes from the field and how bland it will be when not cooked until the next day or how yucky it is either purely raw or excessively cooked for 2 hours. I advise moderation between the poison of disease and cooking on the basis that blanching or slight steam cooking improves food vastly more than long shelf life harms live or dead foods. In other words, hardly anyone actually needs 100% of the most nutritious foods all of the time and hardly anyone needs to be sick even once a month. Addition support of this view is that world wide people survive on cooked food just fine, with gusto. Consequently, it's a matter of balance, and personally I favor blanching, slight steaming, and stir fry and avoid heavy cooking and heavy cooking oils. Man has cooked for for a very long time and it has not killed him. What man does to food in terms of growing, manufacturing , putting in substances that have no right to be near our bodies, the poisons being put down on us intentionally in the form of chem trails in the sky (provable) does far more harm to us, than the act of cooking in my humble opinion. What also does more harm is the internal cellular memory of stress, that makes our bodies malfunction.....a happy eater, will fair better than a stressed eater. Also, keep in mind that while he is a doctor, doctors don’t study nutrition. Rawfood diets do appear, in terms of short term cleansing diets go, to help the body detoxify. BUT, I will say it again, they use pseudoscience to explain why it “works†and then claim that because it works in the short term it works for the long term. What one does for short term healing is quite different from what one does for long term health and vitality. The healing benefits of raw have nothing—nothing—to do with the so called “food enzymes†being “living†and “helping to preserve or restore our body’s enzyme ‘stores’â€. All that mumbo jumbo is a crock which is quickly revealed when one studies biochemistry –which I did for my masters. Truth is, the benefit of raw is simply that it is a) high fiber not processed c)nutrient dense. BUT, the same can be said for a macrobiotic diet and it has the benefit of cooking out inhibitors and otherwise breaking down foods so that they are much easier for the body to digest and absorb the nutrients. And, ummm…if cooked food is poison…why would you be eating it even a little bit? I assume by your statement claiming to eat a “modified†raw diet you mean you are high raw. Again, fats stay in your arteries, liver, and slow down your brain. Oils are processed food. White bread has been demystified. Grab a fresh coconut and eat its meat. All enzymes are there. So an avocado. Nuts may still contain enzymes. Enzyme nutrition is very important. I love his 3 simple rules and they pretty well cover it (though he goes into each one more deeply so the book is a valuable read): 1. Eat food (meaning really food...not pseudo food...food as nature made it with as little processing as possible) 2. Mostly plants 3. Not so much of it And, forget that garbage the American Dietetics Association spouts about " all things in moderation " because they are the mouthpiece of the food manufacturers. Processed foods really are poison and they really will kill you. (For a good read about the politics of the food advise you hear from the ADA and the gov't, read " Food Politics " by Nestle...but be read to get really PO'ed.) Oh, and while I'm at it....a book I truly enjoyed reading and learned a lot from is " Probiotic Revolution " . Not knowing that I myself have a Brooklyn accent, I found myself in Florida one day about 20 years ago. I was visiting my parents and we all went to the movies. The movies cost $1.00. I was amazed. One dollar? I went for popcorn, and that cost $4.00. I almost jumped. I said to the popcorn lady " Are you for real, it cost me one dollar to see the movie and it costs $4.00 for popcorn?? It is felt that the " capillaries " must be open up by steaming or light blanching. Also, that some oil is necessary to get the benefits of vitamin A. I think cooking green veggies needs to be learned for maximum benefit. But, burning by overcooking is not my idea of healthy fare. It is also my belief that eating a whole lot of cooked vegetables provides a lot of fiber and that is fine for America since it is missing in most people's diet. Any good qualified expert will agree. When I became a vegan about 16 or so years ago, I learned everything from Prescription for Dietary Wellness. It is the A-Z of natural food. The book is written by Mrs. Balch. Interestingly enough, her husband Dr. Balch, who has or had a large medical practice, recommends a 75% raw food diet for a lot of ailments outlined so in Prescription for Natural Healing. They are not vegans, yet work a lot with juices, seaweed, raw veggies, etc. Also, he has well worked out protocols for a lot of illness with vitamins, supplements, diet, etc. I do believe in the enzyme " theory " . I see my students when they eat raw salads. (yes, I ask) Their responses are much faster and their learning abilities greatly enhanced. And, that whole “enzymes preserving thingâ€â€¦more bull. Whether the enzymes are denatured by the heat of cooking or by the acids in your stomach, they are nonetheless denatured. They do not assist in digestion. A healthy human body can produce it’s own enzymes for it’s full lifespan without “borrowing†from raw food. Again, raw food as part of a whole foods diet including cooked whole grains and beans can be a very healthy and healing way of eating. Why cook sprouts? A building is comfortable and good but put it thru fire and is totally destroyed. Will the building be of any value? Answer: NO. Cooked fats the same. They are carcinogenic when cooked. Dumped them. Use them in small amounts. Cousens, MD says regarding fats that we loose oxygen in the blood as well as in the brain. I had heard something like it from other vegan MDs. I was never able to understand why not fats. Some people can tell you is the number of calories. This did not make sense to me because anybody can compensate. My impression, and I am not a doctor although I am familiar with what is called the Krebbs cycle, is that fats are not readily metabolized meaning they do not burn like protein or carbohydrates. Carbohydrates stay in the liver and muscles. Protein sort of repairs " ripped muscles " , anybody can tell me where fats go. They stay around. Carbs burn with exercise. The body starts eating its supply of adipose tissue or fat after a few days of fasting. So unless there is a serioius deficit of calories, I will not eat oils. Raw foodists are adviced to eat a maximum of 2 ounces of nuts a day. By soaking nuts and mixing with veggies one can make interesting dressings and maybe only on occassion have these heavy things like cheese and cakes One avocado a day ( a fatty fruit, folks) is suggested for the very youung up to 30 or so and then 1/2 avocado thereafter. Again, fats stay in your arteries, liver, and slow down your brain. Oils are processed food. White bread has been demystified. Grab a fresh coconut and eat its meat. All enzymes are there. So an avocado. Nuts may still contain enzymes. Enzyme nutrition is very important.
