Hi All

I got one of those big plastic 5 gallon containers, it is easy to cover, stays

tight, don't have to find gallon jars (since restaurants get their pickles in

plastic jars now) It is great, and it is practical, but you can't watch the

scoby grow, and at this moment that is a minor detail. doubling the

ingredients works very well, makes a really LARGE scoby. Does work great though

maybe I'll get used the big plastic bucket sitting in the corner.....

I just don't like plastic anything!!!

Hello All,

New to the message board here...was wondering if anyone has ever

doubled the recipe for tea, and has anyone ever used those big plastic

containers that seemed to have replaced the large glass jars used to

ferment? I can find those easier than the glass ones it seems...Thank you!

Good Morning,

As you may recall from chemistry class, acids are stored in glass to prevent

the acid from destroying the container. Kombucha becomes more acidic with

time. E.g. a List member wrote in a few months ago and said that he started

getting arthritic pains from his plastic-brewed KT. (His Austrian

KT -drinking relatives had no such problems). His wife was rushed to the

hospital with terrible gallbladder pain. After they removed it, the doctor

discovered that her gallduct had turned rigid because it was full of

petrochemicals, ostensibly from the plastic. He also noted that the yeast

seemed to burrow into the plastic over time, pitting it with holes.

I asked at the deli I go to for them to save me the gallon jars the pickles

and peppers come in. They gave them to me for free. I also ordered the

Anchor Hocking 1 gallon jars from

www.instawares.com<http://www.instawares.com>[they also have a 2

gallon if you are doing a double batch] They are wide

and straight sided so it is easier to get the scoby out for your next batch.

I, too, have asked at the deli for their glass gallon jars that

pickles and olives come in; another avenue might be your local thrift

store -- they usually have several gallon jars, sun tea jars, etc. on

the shelf, or you might try local garage and yard sales -- I have

picked them up out of the " FREE " stack on several occasions.

Lastly, too, now that the " Gift " season has arrived, specialty stores

often have gallon jars of exotic olives and other delicacies -- buy

yourself a treat, and then keep the jar!

For those willing to shop at Wal-Mart, they have glass " biscuit " jars for less

than $6.

They may hold a gallon, but I use 12 C of water, to leave airspace.

Linens-n-Things sells square gallon jars for $5.99. I have bought 4 of them and

am going

back for more.
