Here is a link to a video I made of what I call " Birds nest patties " The first few seconds of the video shows how I make the yogurt dressing to put on top of the patties. She will demonstrate in one of her upcoming videos her revised edition of the recipe (she has a video of her making them on youtube, but she has since revised it).She is using Japanese Panko, which is a Japanese form of breadcrumbs.The Chinese birds nests you refer to are completely different and are in factreal birds nest. I was in the Asian market today and was standing in front of a display of those very nests! I had loaded my cart up with gorgeous baby Chinese broccoli, eggplant, and some herbs. Everything looked so fresh and green. They usually eat them in soups for their nutritional value. The little birds make the nest with their saliva.They were boxed in the market and in the special section of the market that sells chinese medicine and special, expensive products. You might see Shark's fin soup nearby--that's another specialty.If you google " Chinese Birds Nest " and look under images, you will see a photo of one. Poop, feathers, unhatched eggs, you name it, got tossed out of that little nest.Just the same though, I will pass on the real bird's nests and stick to Melodys.I also noticed the soy bean and mung bean sprouts at the Chinese market today--I prefer my own now. I also tend to make changes. I added radish sprouts and mixed grain sprouts to my patties. I am sure this is something I will eat once a week and I will probably try all kinds of different sprouts with the mung beans. I will look for the Panko bread crumbs to try that also. I also used my new electric knife to try and cut through a winter squash. DIDN'T DO A THING TO THE SQUASH. So I guess I'll use it for other things, but not for my winter squash. Oh woe is me. Just be really really careful with your meat cleaver.
