Mine turned reddish also on the third day dont know why but ive tried feeding the reddish sprouts to our pet geese they didnt really like it they barely ate it, it also taste slightly bitter. But i think its still edible but ill keep you updated if one of them dies then we'll know if its deadly or what. Once the leaves come in, chlorophyll gives them that bitter taste. I wonder if there is anything we can do about it, or maybe, with the passage of 3 or 4 days, this has to happen. They taste just fine and there is no smell whatsoever so they should be fine to consume. I always go by the smell. If something smells bad, I toss it. But these mung beans have no smell in the fridge. They are just starting to turn color. I'm using them tonight. They will make a wonderful onion garlic bean sprout stir fry. Guest guest Posted February 10, 2011 Report Share Posted February 10, 2011 One assumption I had was that the weight I had on top of the sprouts was the cause for the discoloration, since most of the sprouts below the top layer were normal colored. But my paranoid nature persuaded me not to eat them; rather than throwing them away, I just planted them, but I digress. To test my assumption, I started another batch of mung beans without the weight on top; lo and behold, no red sprouts. So having pressure on the beans turns them red I guess.
