We need advice on setting up a micro dairy for raw milk, butter, buttermilk, cheese & yogurt. Eventually, up to 50 gallons a day may be produced. More is possible, but we need to get some experience before expanding. We have 9 cows and 20 ewes that we can milk. This year either cows or ewes will be milked and only 3 or 4 animals total. Since we raise rare breeds, these animals are not high producers of milk. Any advice on immediate needs before a dairy parlor is built? What are the minimium requirements to begin with? We do have quite a few books on sheep and cows including the Dairy Encyclopedia, a 3 volume set. Thanks in advance!
