, you can be gluten-intolerant but still test negative for celiac

(I have). In a non-celiac, gluten-intolerant person, this often presents

as GERD - especially in people with hiatal hernias. I was born with a

hiatal hernia, but am nearly asymptomatic since stopping grains many

years ago. When I was still eating grains - even though I knew they made

me sick, I thought they were " healthy " - I was constantly on meds like

Prilosec, Tagamet, etc.

FWIW, the one thing that causes problems for my HH is eating too large

of a portion. This rarely happens any more since I no longer eat in

restaurants and am able to control portion sizes much better at home.

We have a son who has been gluten free and casein free (milk protein)for the

last 8 years (he's 13 now) for autism. As a family we eat a lot of potatoes,

rice, fruit and veggies. For grains, get a bread machine and experiment with

bread recipies. Soy flour is nasty, and rice flour is too fine to use by

itself, but try mixing with tapioca and potato flour. Leave the salt and baking

soda out of the recipies. The will smell great and taste not too bad if you

cover it in jam! If you can tolerate oats they have a fair amount of protien

and no sodium.

Most of the prepackaged, processed gluten free foods are high in sodium so read

the labels.

For potassium we do walnuts, dates, bananas. Coconut water is faily high in

potassium too.

We have a bread maker too somewhere. I actually think i can do without the bread basket. It isnt as hard to give up as some things. Maybe becuase I stopped eating it for so long doing lowcarb. I usede to make my own bread and pizza crust from scratch years ago, and thought about experimenting to make saltless pizza crust. Yes, I LOVE PIZZA. There, I said it.
