Often tastes varies... I have gotten good results and bad. Best Brown sugar I

have tried was one from Whole Food ..  have also gotten excellent results with a

Piloncello.. Solidified brown sugar available in Latin/Hispanic grocery stores..

I have gotten a fouled smelling KT and sometime and acetone smelling KT from

brown Sugar can't remember which brands do that but I find the results with

White Sugar more consistent.. never a foul taste or smell

brown sugar is nothing more than white sugar with added molasses.   It works

I often have a mental picture of some old "

Russian sheep herder in a funky tent with his Kombucha fungus " does he then tell

his 3rd wife to run down to the 7-11 to get some Imperial granulated white sugar

or does he throw in any sweetener or sugar he has available.......

Ha, RJ! Love it.

I do use white, granulated sugar, but I'm new, and I do wish to eventually

branch out. RJ's comments raise a good question. For a beverage that is

2,000 years old (or older), what DID they use to feed the SCOBY??

I have never used brown sugar ... but I have used succinat (sugar that is

" whole " where they have not separated the molasses out of it). I didn't

like it as the finished KT had more of a beer taste and I don't like beer.

My other half loved it.

I had forgotten all about that one,  used to use Sucanat  when I was in

California

-it doesn't seem to be available in Indiana, at least not in the normal grocery

stores.  I can't drive anymore so just have to go where my daughter goes.

My current favorite is Zulka=  fairly unrefined  from Mexico

it is vanilla colored  and has a distinctive taste of its own, not exactly raw 

but close enuf for my tastes.
