What is in our air, what part of the house we keep it in. And depending on how metaphysical you want to get, even what sort of energy we put into it by our thoughts and emotions. I believe I recall people relating experiences here on this list of getting a different culture from a friend because they liked x, y or z aspect of it, and over time it became just like the one they had already had. I think WE are the biggest determinant. Just my thoughts and opinions on the matter, Jaxi PS ... GTs is not adding carbonation or they would have to list it on the label. What they do have is a fairly consistent product based on using huge vats, same water source, same amounts of stuff, they likely do ph testing to determine when it is done, etc. To make it at the scale they do, boggles the mind really. > Greetings. > I have been making my own KT now for about 1 month. I am now using 3:2 green to black and seems to be nice Metaphysical .......wow........the scoby I now have that I made last week , when I was in a bad mood must be suffering from depression, self-pity, emotional immaturity, and neurosis......... I have a friend/acquaintance who has like 10 containers of KT going at any given time ... she also has a family of 4 to keep happy plus she does 2nd ferments to trade with people. I have one crock and 2 of us. Mine is deeper and more complex I think. Richer, maybe. But I don't do 2nd ferments at home. So mostly if I buy KT it is the flavors that appeal to me because I don't take the time or energy to do all that. I am thinking some classic rock would make my scoby happier than yanni ... but then perhaps i am projecting. They have a flavor called " Third Eye Chai " which is simply sublime .. Relatively easy to replicate at home by the way but I digress what I can't get from my brew is consitent fizz .. Sometime I think i have nailed but not with consistency the brews are too often flat, I lke the fizz .. I looove the fizz.. I have had brews second ferment form 15 days to get marginally fizzy .. No effervescence to write home about I find my KT to be as good as GT at times but they remain above mine IMHO .. I also have some big 32 oz brown glass ones that originally had Dr Sklenars formula from Germany . I figure I just save around $150 over the last month from making my own. Brew the KT with the following: 2 White Tea 4 Green Tea Your usual amount of sugar. Now brew your KT as usual. When it is ready, you have to put it in a really well sealed such as the Grosch flip-top or the GT KT bottles. You fill the bottle to 3/4 full. Prepare on the side about 30 ounces of the following tea.' Hot water 1 Tbsp of Sugar or Honey I haven't tried it with Honey but that a thought ... 2 Teabags of Good Earth brand " organic Seven Spice Chai Tea " .. make sure you cover the container while you steep the Chai Tea for at least 5 minutes but no more than 10 Let it cool completely again covered the Chai is about odor,flagrances and they will escape if you don't cover it. Add this tea to the Bottles to almost top them off. Double ferment for the amount of time that provides you with good carbonation/effervescence/fiziness ... Refrigerate when youfeel it ready. Take a Chanpagne Glass ... Relax and just enjoy an ncredibly sophisticated tasting/smelling beverage that is not only heavenly good but provides health .. I am a convert I have another re-discovery anextremely flagrant called Oesmanthus more about it later....
