You don't have to worry about it, kombucha is already quite acidic itself. Lemon

makes a good flavoring for kombucha, just go easy or it gets really sour. You

don't wanna put lemon in booch while it's fermenting, the oils may prevent

sufficient gas exchange at the surface. We make a lemon ginger flavor of booch

that is really nice. - Woody

I brewed kombucha, I then made a drink for myself that was half kombucha,

half lemonade. While I was drinking it, I wondered if the lemon would hurt the

kombucha - lemon juice is strong, I believe it kills bacteria.

Lemon wont kill it, but the peels hinder some of the bac growth.  Because of the

oils.  Don't use it until the 2nd ferment and you're good.

Sure, it was really quite simple. Just a couple of slices of fresh ginger and a

couple of pieces of fresh sliced lemon dropped in the bottle before pouring in

the booch. So delicious and tastes better and better (if somehow you can keep

some aside for a while). Just be careful, it's really easy to put too much of

either ginger or lemon, they are both powerful. If you do you can always dilute

it with more booch later. So yummy!!! - Woody
