Guest guest Posted March 19, 2012 Report Share Posted March 19, 2012 Hi EveryOne, The question of when Kombucha is the best always comes up but since no formal studies have been done and since everyone is a unique individual it really isn't possible to know what stage of fermenting is best for everyone. Chances are that Kombucha is best for you when you like the way it tastes. Some people like it sweet-sour and some very acidic and everywhere in between. I have noticed that some people with Cancer like their KT very acidic....perhaps it is at that stage that it helps those particular people. After about 17 days there is very little sugar left in KT. Various yeasts and bacteria wax and wane during the fermentation process. There are not necessarily more of all of them after a long brewing time.
