In Kombucha brewing 'messy' is o.k.! The bits and pieces will get strained out at bottling time. Forget about wearysome coffee filters! Tea strainer or fine sieve is good enough for the job. I am also concerned because despite being stored all these months there was no vinegary smell - the brew was still sweet - did not taste off, but did not taste like kombucha either. So I added vinegar to each jar in hopes of stimulating it properly. Yes, brewing KT is cheap but not really considering the cost of everything it was close to $7 for this batch if not more. If I need to start over - haven't kept up with recent events - hope I can get raw KT in store if need be. I seem to recall that there was talk of legal requirements to pasteurize in order to control alchohol content? > > > HI! Long Time!
