Guest guest Posted April 19, 2012 Report Share Posted April 19, 2012 Some of us are more sensitive to the " goaty " flavor that comes from the short chain fatty acids inherent in goats milk. For we who can taste the difference there is a difference....my step mom could drink incredibly goaty milk and not taste it at all...I served some goat cheese to some friends once and they were disappointed that it didnt taste goaty like the artisan chevre at the coop LOL... My preference runs to very high fat very sweet milk. If someone wants high bf/protein sweet sweet milk they are less likely to find that in a Sanaan or togg.... and for those of us who can easily taste the differences breeds can matter....and yes there are high performers in every breed but the tendency is that Nigerians, Nubians and boers will have more alpha S1 casein and therefore less of the short chain fatty acids associated with goaty flavor... You can do things to make any milk taste better then it does without clean milking and quick cooling but some goats have better tasting milk then others....YMMV aliza > >  Matt >  > Agree with your Top Three ! Would just like to expand a bit on FEED. . ..think excessive graining can lead to 'digestive stress' and off flavor. Vitamin defeciences too, primarily A & E (wheat germ oil can help). I think that goats tend to be individuals and every rule you try to establish; any goat on any day, and any breed will test your theory/or your science - Nature does have her own way. . .and while we think we've got it so nicely encapsulated. . .eehh maybe not. I have worked for many years (nearly 20 yrs.) with Saanen, Nubians and such crosses. Had a shareholder just the other day wonder if I had given her someone elses milk, cause the flavor was so 'mild '. She acutually wondered if we were milking a cow. - Not sure if that is a compliment. . . but we took it as one. I tell people if you are looking for a goaty or tangy flavor, they won't find it here. And why would anyone purposely alter/gimick with the flavor of their milk ? If I knew my farmer was doing that I'd be out of there. If someone is 'fudging' on the flavor of the milk where else is one being deceptive. A bit disappointed that you would mention such a ' practice '. While your opinions are just that 'YOURS' I wouldn't want anyone 'reading' you to think this was a standard/or accepted practice . . Sorry clean milking procedure and quick chill DOES MATTER to those of us with conscientious safety standards in mind. . .some of us feed children and the sick.
