Also leaving the tea leaves in more than an hour would increase the tannin in the tea, which is the substance responsible for the bitterness. So, leass steeping might be your answer. You may use too much tea. 2 teaspoons per quart ought to be more than enough. Hope you get over the bitter phase quickly. Letting it ferment longer could help.
