Alina,

3 possible reasons:

I had the problem once with green tea, brewing it with boiling water,

instead with water off the boil.

Also leaving the tea leaves in more than an hour would increase the tannin

in the tea, which is the substance responsible for the bitterness. So,

leass steeping might be your answer.

You may use too much tea. 2 teaspoons per quart ought to be more

than enough.

Hope you get over the bitter phase quickly.

Over-steeped tea, too short a ferment time, or lotsa yeast in the drink

can contribute to bitterness. Letting it ferment longer could help.
