I keep my hotel at room temp, top off with KT periodically, lasts indef really. I will add new ones to the old ones if I need more, or I compost some of the extras. I do not have a hotel but I have set up enough neighbors that I should be covered if I ever need to replace my SCOBY. There are plenty of people that will reimburse you for shipping to pass the gift along. Please consider passing along the gift of kombucha. I actually took them out of my brew to give away but the two co-workers changed their minds. Why keep cultures in the fridge? The acidity of the KT+ scobys is the best preservative and it keeps the yeast and bacteria active an your fingertips, while fridge makes the inactive.
