I never deliberately allowed mine to go to vinegar because it does it

quite well on its own, so when I get the vinegar I bottle it

seperately and use as I would any other vinegar, PLUS its great as

a hair rinse and skin conditioner.

Hi all, I'm back. Survived the ordeal mostly thanks to all the

prayers. Both rounds of chemo were total failures and it was assumed I

was going to die- but lo and behold I went into remission and

continue as we speak. Its been a long road back, but here I am

almost as good as new.

I let mine sit for about a month or longer, depending on temperature / time of

year. Sometimes after bottling I add fresh herbs from the garden such as

basil, thyme, marjory, etc, whatever I have, lately also some wild garlic seeds.

( I have also used dried herbs, it works, just does not look as pretty). Then

let it sit again for a month or so. Makes wonderful balsamic type vinegar!

Last year I made 6 bottles in the fall, planning to give some to friends at

Christmas. After using one bottle I decided to keep them all since I suspected

that no one would appreciate my balsamic kombucha vinegar quite as much as I do.

I have become my own best friend....
