Last night I opened a new bottle of Kombucha, and hey presto, there was a little scoby hat on top. Yum! I enjoyed chewing that! :-) If you have not let your brew get very acidic, the scoby can taste pleasantly lemony. I swear by its efficacy for nipping a budding cold/throat condition in the bud. Just chew it and enjoy it as you would a pickle. The Scoby has all the goodness of the Kombucha tea and can be eaten. Some fry them like calamara and eat them as snacks. I have read and seen some nice results in animals, dogs with their hair all messed up can benifit by eating " Scoby snacks " , where they grew the hair back and actually got stronger is the amazing thing. We here at our house use Brewed KT in our recipes that call for white wine, with good results, so eating scobies is not out of the question.
