Hi Jeff,

Just tell us the name of the town or city and state you live in and perhaps

someone who lives near you will share a Kombucha start for you either for free

or for shipping charges only.

There is also a folder in our FiLES section called " Kombucha for Free " which has

the names and emails of list members who share Kombucha

re acidity, it's a function of the bacterial component and there are ways to

influence that well described by len porzio under " DECREASING THE RATIO OF YEAST

TO ACETOBACTER POPULATIONS " on this page

another thing to think about is the acetic vs lactic acid issue, where i think

acetic acid bacteria are desirable, but i don't know enough about it...

in a nutshell, your scoby will change over time responding to the environment,

regardless of its source.

Hi Jeff,

Yes, Kombucha from different people will be different in many ways: depending on

the water they have, the teas they choose to use and the sugars. Quite quickly,

it will all be transformed into your unique culture which hopefully you will

share with many other people.
