I juice an orange, mix with two tablespoonfuls of seeds and wait around 15 minutes (or sometimes hours, if I forget). Guest guest Posted March 15, 2012 Report Share Posted March 15, 2012 I have been using chia seeds in my secondary ferment for several months now and this is what I have discovered..... I started out using 2 tbsp per 16 oz bottle (Gt Dave's Synergy bottles) along with puréed fruit when I bottle for secondary ferment. I'm sure my next statement will prompt a posting on the dangers of secondary fermenting as I leave them out to ferment in boxes for up to 2 weeks to achieve the level of carbonation that I enjoy best. I will say that I have NEVER had a GT bottle explode in the 3 years I have been brewing and I attribute this to the bottles and or lids themselves. I have had other brands of glass explode but never a GT bottle. This is why i keep them in boxes. However, with the addition of the chia seeds it seems to have increased the level of pressure and carbonation and I have had several lids crack(not bottles) until I managed to figure out the proper amount of chia as well as how full to fill the bottle. Ok....first time around with the chia seeds was highly pressurized and ending up being a huge mess. When I opened the bottle the lid came flying off and hit the ceiling and volcanic geyser of chia seeds spewed everywhere! All over my clothes, the wall, the dog, and clean dishes. Now let me say that these slimy sticky seeds do not clean up easily and stick to everything! I still had them stuck to dish towels even after laundering. What a mess! I expected the dog to grow a pelt of chia spouts. Talk about the ultimate chia pet! After some adjustments I think I have down to a science..... Only one tablespoon of seeds and I now leave an inch of airspace in the bottle. The airspace gives you a couple secs before it starts gushing out of the bottle. I also put the bottle inside a gallon ziplock upside down over the top so that when I open it any geysers are contained within the ziplock and I don't lose a precious drop. I am loving the chia, gives me energy and I don't get hungry for hours after consumption. My favorite flavors with the chia are cherry and passion fruit or pineapple, mango and passion fruit. Adding a couple whole cherries is yummy too.....they get all fat and drunk on kombucha! A couple FYI's..... After 3 years of drinking kombucha I am thrilled to report that my fibromyalgia is GONE as well as arthritis in my hands and my IBS is now manageable. Long live kombucha and those who drink it! I've been adding mine a few minutes before drinking, but i like the idea of adding at bottle time (a la dave's). One thing i'm wondering, do you ever have problems with the chia clumping together? I usually gently tip the bottle back and forth to stir things up a bit once or twice during secondary ferment. When I was filling the bottles full it was more of an issue as they would form an almost impenetrable cork at the neck and mouth of the bottle that no amount of rocking could dislodge. At that time I had been using closer to 3 tablespoons of chia. Reducing the amount to 1 tbsp and leaving an airspace at top seemed to solve the cork like clumping. They soak up a lot of the kombucha......with 3 tbsp it was a jar of chia gel; with 1 tbsp the jar had 2/3 kombucha left and a third of the chia gel....more to my liking!
