There is nothing for you to do until your brew is taste-worthy and you taste it and know that it is ready to pour off. Your ratios are fine if your tea got strong. The only thing different I do is I steep in 1/2 of the water and let it cool overnight. Then heat the next water and steep the tea again. But that's just me. I like to get all the tea out of the bag. That tea is sitting and I am still hopful. The new brew is from Scoby from a neighbor. I added sweet black tea, no vinegar, covered and put it in the cabinet. Was I supposed to use vinegar for something? Guest guest Posted February 23, 2012 Report Share Posted February 23, 2012 Iam in hope that you got a cup or two of starter ( already brewed KT) to add to your first batch If not you can put some apple cider vinager , Pastuerized NOT Organic, in there at about 1/4th a cup per 3 quarts or a gallon to get a acidic start removing the chance of mold. Any Pastuerized Vinager will work, I just perfer ACV, to me it taste better. Now this is only if you didnot get and add 1-2cups of KT starter liquids, and for the first brew only. Every brew put aside 1-2 cups of KT for a starter, will help keep the KT good for years to come. That's about 1 unit vinegar to 48 units tea. Seems like that little amount of acidity would have a hard time pulling the pH down for that much solution. Just a guess, i haven't tried it and measured. If you're adding acid to lower the pH it would be good to make sure you are using a sufficient amount (JMHO). - Woody [Please, tidy unnecessary backposts!) Don't worry about the vinegary taste. It was just like that for me when I first tasted it. I didn't like the vinegary taste, nor did I like the carbonation. Two bad things about getting KT into me and I wondered how in the world I was going to make this a daily habit. But you will be able to experiment with flavors in your secondary brews and come up with flavors you like. In that time, I think mine are aged ginger. I will try adding lemon to that now for added flavor. I also like aged peppermint alot. Vanilla also ads softness to kt and that can be drank after it sits overnight. I got the information from Guether 's book and did the math. Anyway, I have not seen any mold, so far. If you have the book its on page 31 near the bottom of the page. If you dont have it , its a good read. http://www.kombu.de/english.htm I dont see how more vinegar would harm the Kombucha, unless its not distilled and pastuerized.
