RE: kefir culture

If it's commercial, it doesn't have all the bacterium that the natural grains have. I think the commercial ones, and the powdered ones, only contain 10 different species, whereas the natural grains contain dozens.

what is the point of getting kefir grains/starter when u can just use an oz. of regular kefir to make a qt. of it?

would this same reasoning apply to yogurt making as well? Would using a commerical plain yogurt not be as good as using a pure starter culture?

I don't think it is as drastic with yogurt as with kefir. I think if you got some raw milk yogurt made by the farmer and used that as your culture, it would be very healthy with optimum amounts of probiotics. But then, I do not think the powdered yogurt culture would be quite as good...adequate...but not as good a quality.

Don’t agree w/ that. Depends

entirely on the components of the culture, and the yogurt you get from the

farmer, and what he used. I use an added probiotics ABY653 and ABY2C from dairy

connections. By uses a frozen mother, or DVI powder you will have more

consistent bacteria, and when you reuse yogurt typically the strep thermopolis

grows at a faster rate, and will become predominate, an issue for some people

w/ gut/immune system challenges.
