The size change may delay the brew, or may not, its up to the SCOBY. They can/do have a mind of their own,lol. You would be looking for a " baby " , an new Scoby to form. That lets you know things were going as planned. That is before it fell. Also, you should see another form on top, if you have 3 more days. M > > I am on my second brew of Kombucha! Take it from one who did not like it when I started last spring. Now it is a proverbial " habit " for me. In general, I find I like vinegary drinks now when I never did before. I have three 2.5 gal crocks brewing and 3 single gallon jugs and I pretty much keep stride with my production. I have given away a few of my bottles of brew. Kombucha is fun, and fun to share.
