I love that apple cider taste, and the acidic bite, and don't like it sweet. I also have read the healthy properties of KT increase with more brew time (along with the acidity). Two weeks doesn't seem excessive, some of the tea in a CB vessel can be much older than that. LOL Although I'm really starting to like the beer brew taste. Also, I prefer my KT straight from the tap and so far haven't encountered any big squiggly problems. But if I should get any, I'll pull out my funnel with the built-in strainer; it does allow the very fine yeast to come through. Also, I did my first second fermentation 3-days ago with a quart of KT and some dried cranberries and after transferring to another container noticed carbonation....that was a first for me! Guest guest Posted January 29, 2012 Report Share Posted January 29, 2012 I would guess the container temperature is varied and the scobby at the top is not getting the benefit of the heat.
