It wasn’t until my family moved to Chicago that I became lactose intolerant. My mother and I realized in time that it was due to the change in milk as we were no longer able to purchase raw milk. Within the last year I joined a milk coop and started purchasing raw milk and no longer have to deal with the undesired side effects of pasteurized milk. I am an early childhood waldorf teacher who cooks for my students. I should say we cook together. In fact most of our day is focused around our lunch. We prepare food… we set the table accordingly- to color of day and season. It’s all quite beautiful. I have been researching food and recipes for quite some time now as I hope to help educate the parent body on the importance of “Healthy” fats. It is amazing the amount of children who come to me on a vegan or vegetarian diet (intentions are good but unaware of the negative side effects). So far I have learned that the best information has come from other people like myself willing to share information that makes the struggle of eating healthy a lot easier.
