Guest guest Posted June 13, 2011 Report Share Posted June 13, 2011 Dear Ones, My white fizz comes with each brew. To preserve the fizz, I get everything ready to harvest it before removing the scoby. Then I dip it fast, before the fizz has a chance to evaporate, into a gallon, glass, grape juice jug, cap it with a thick layer of plastic under the lid, and keep it in the refrig. It never turns to vinegar. This new kombucha culture makes a fizzy brew with a bite which my children and grandchildlen love. Do you think that the bite comes from my using 5 black tea bags, 1 white tea bag and 1 green tea bag (instead of only 5) to 1 1/2 cups of sugar in nearly four quarts of water? Blessings on you all.
