Guest guest Posted August 9, 2011 Report Share Posted August 9, 2011 I have been doing a continuous brew since May. We went on vacation for a few weeks. I haven't been able to get a good brew since. I made a fresh batch of sweet tea before leaving. The summer has been cool, and the house temp hasn't changed. In an attempt to get it back to what we liked, I feel I may have made things worse. I didn't take out the SCOBY, but I drained quite a bit of the vinegary KT. I steeped the tea to make it good and strong/ I added the normal 1 1/2 cups sugar. In TWO days, the KT was already vinegary! Should I steep less? Should I syphon off from the top and dispose the bottom KT? (The fizz is perfect for us. We only do a first ferment; add fruits in a pitcher and enjoy.) Thanks for suggestions!
