Even in the cold fridge which slows things down - you have tea and sugar with no preservative to prevent anything from taking up residence and growing in that medium. Maybe a day or two would be okay but any longer than that and I think you're asking for trouble. Fridges harbor different strains of yeasts and bacterias from cheeses, yogurts, kefir, things that may have gone bad in there in the past, etc etc. My opinion only others may differ. Hi , I definitely would not save sweet tea. Too dangerous to culture unwanted organisms on it! The fridge is surprisingly full of mold spores .... Can't you make a small extra brew on the side? All you have to do is pour some KT with or without a bit of scoby on the tea-sugar mix, cover and leave it just like your big brew. I have done that successfully at times, since I also suffer from superfluity at times Let us know what happens!
