You could just multiply the amount of water, sugar, and tea you are using now by 2.5. Be sure and have at least a quart of starter for that size of brew (10% of total volume), so allow room for that. If I were doing it, my proportions for 2.5 gal of fresh tea would be 18 teabags, 3-1/3 cups sugar with 2.5 gal water.
