Guest guest
oooo I just bought a vitamix, that will be something I'll have to try to make. Thanks!  Patti ________________________________ To: original_kombucha Sent: Saturday, January 7, 2012 1:28 PM Subject: Kombucha sorbet  I just noticed that Steve's brand is making kombucha sorbet. I got some, it's like an Italian ice, it's pleasant. They did put a lot of sugar in it, and some strawberry. I am getting an ice cream maker soon, I think I will try making my own kombucha sorbet, less sweet than the commercial one. Does freezing kombucha kill the little guys? Thank you, Tamara
Guest guest
Hi Woody, Jay and EveryOne, In his excellent book about Kombucha, Gunther tells about freezing Kombucha colonies. If it is done quickly and to a low enough temperature it can be done, however if the process is slower then ice crystals can form and destroy the Kombucha colony. Highly recommend the book Kombucha: Healthy Beverage and Natural Remedy from the Far East. Peace, Love and Harmony, Bev > > According to Dom (probably the world's kefir expert), kefir grains will perish from freezing. Since kefir and kombucha are both scoby's, just different strains of bacterias and yeasts, it is likely the same will hold true for bucha. Seems like a valid hypothesis. We could experiment by freezing a scoby and starter, thawing it out, then trying to ferment a batch of tea. The control would be an identical scoby and starter that isn't frozen. But even if the cultures aren't still active, you still would get the benefits of the organic acids, vitamins, enzymes etc. And it sounds yummy! If you feel you need more probiotics just chase it with a nice glass of bubbly booch. > > Regarding your hybridization question, it is known that various cultures can contaminate each other and create a new culture with different characteristics. You normally should try to keep kombucha, yogurt, kefir, ginger beer plant, water kefir, sourdough, beer, wine, cheeses, cultured veggies, and other cultures separated to keep them pure. The results are different depending on the types being crossed, and might be good or bad depending on your perspective or requirements. Also, the resulting hybrid may not be stable and produce consistent results like the parent cultures. Pls give it a try and let us know what happens, but be sure to keep your original cultures going. Guest guest
ME, nutty? Are YOU crazy or somethin'?? LOL Nope! I just recently happened upon a doggy recipe: blend 1 qt frozen low fat yogurt, 2 TBSP honey and 2 TBSP peanut butter; freeze. My dog loves ice cream and sherbet so I thought this recipe sounded like a winner! I have lots of small RTS plastic pudding/applesauce cups saved up so this ought to work out great for portion control since she's now on a diet. I think that will be my project for today....and I'll let y'all know how she likes it (of course I'll be adding some KT to it). Guest guest
Yeah i am crazy or somethin', what about it? LOL, that doesn't sound like a bad people recipe. You have a lucky dog! Dogs are funny sometimes, one of my dogs won't get anywhere near yogurt or kefir and the other one loves it!
