Guest guest Posted January 16, 2012 Report Share Posted January 16, 2012 I just had some ginger/beet, which coincidentally was made by the same woman who harvests honey for some of her kombucha. (I'm assuming she added the beets in 2nd ferment for flavor, not in 1st stage as a sugar source.) Was totally unimpressed, it was very reminiscent of kvass... (so much so, that for a few minutes I was trying to figure out if the kombucha tasted salty, LOL) But apparently she didn't use much ginger.
