I just milk the animal wherever she is standing when I'm ready to milk her, whether it is in the barn, the yard, or out on pasture (my personal favourite). Only on rare occasions do I have problems with an animal not standing still, in which case I just halter her and tie her up until I'm finished milking her. My grain is pre-ground before I get it, but I would like to experiement with soaking the grain for several hours before feeding it this year. I, too, would like to hear if anyone else has had experience with soaking or sprouting grains. I have some does who will stand fine but getting them to love milking time could be an issue.
