You might consider trying kefir (fermented milk) too. I make mine into cheese or smoothies. I never seemed to have any problem with them. I loved her goat milk kefir so much I ate too much of it and really caused myself a lot of pain. LOL I have problems with candida too. I think I created an over load of die off. That stuff was so good. ha ha Thanks for the info. I am trying to come up with a plan on how I want to incorporate things into my Carb addicts diet. The carb addicts diet is the only way I can control my blood sugars at least so far. More and more obese people are being diagnosed with Celiac. Some of the doctors who have been in the forefront of the research on Celiac now believe that the Celiac may be what is causing some of us to be Obese. I know in my case if I eat Gluten I will gain weight. For some time I suspected it had to do with my insulin resistance and an allergy reaction to gluten. I thought maybe the stress of the gluten response caused me to produce more insulin and excess insulin with insulin resistance causes fat storage. Then I read a book abut allergies making you fat and the author even discuss gluten and allergies. The short story on that is that the body can perceive that gluten is an allergen and the body then produces histamines. The histamines then cause an insulin response. For type II diabetics with insulin resistance that is a major problem. The muscles cells cannot pull the insulin up into the tissue so the excess insulin stays in the blood stream. The body's response to excess insulin in the blood is to store it as fat. My body is good at one thing, storing insulin as fat. LOL Anyways Celiacs who have insulin resistance can indeed gain weight. I was excellent at that. Weight gain for me is one way of telling that I might be getting hidden gluten. I definitely plan on including the goats milk back into my diet. in Olathe Ks From: siski@...
