Mine sometimes rest in their brewing jars in KT when I don't immediately have time to make another batch. The only advantage I can see is that the KT, in which the scobys rest, is getting more acidic in the waiting, and thus a better starter .. acidic being good and all that - I would not say that resting is a requirement, though. The fridge idea is just downright bad. I never, absolutely never ever, put anything Kombucha in the fridge, especially colonies for brewing. They do not hibernate!! The acidic Kombucha liquid is a wonderful preservative and keeps the scobys just fine and healthy! > Is it best to let the scoby get some age or to keep using babies? These are just Kombucha cultures, some younger, some older, some fatter, some thinner, some uglier than others ;-) Once a culture growing on the top is disturbed, it is finished, doesn't matter whether it's young or older. Actually, the correct definition of Kombucha culture encompasses both the scoby/solid mat AND the liquid, which is very rich in the yeasts and bacteria typical for Kombucha. That is why you can grow a scoby just from KT liquid alone. The bacteria resident in the liquid will start building a scoby again across the top of the liquid.
