How do you know when your scoby is dead? How long can a scoby stay in a crock

with others and is it best to keep at room temperature or in the frige? I've

read conflicting opinions on this. Also, the scobies that I have had recently

are huge! Can they be cut in half with a plastic knife? Some of mine are the

size of a dinner plate and over an inch thick.

The only way I know to see if it is dead is to try to brew with it. It may take

longer than normal if it has been refrigerated, or in a " hotel " dormant. I cut

my scobies with stainless steel scissors. Short contact with stainless steel

won't hurt the scoby or the tool.
