The movement will disturb the new SCOBY that is trying to form and instead of getting one nice thick SCOBY you might get some thin layered SCOBYs or a less defined SCOBY mass because the jostling causes the process to keep having to start over. The brew will still ferment fine, but the bacteria in your brew (scoby-builders) can't form the scoby so well if there is constant disturbance. It's not a great issue, though. You'll still end up with a good Kombucha Tea. Happy brewing!
