It went into the swing top bottle fizzier than it is now. As a matter of fact it is flat. The plain kt actually tastes better than the raspberry, but it went flat, too. Neither, tastes great. Phooey. I need to know how much to use on the second ferment?? phooey is right. Thinking need to make a sack and put my chopped berries into the sack... althought my peeps seem to like it without the berries as I pulled it at day 6. Need to think. I boiled 3 c of water, added 2/3 c sugar, then steeped 3 black & 1 green teabags 15 mins. Then I added 3 c of water to help cool it faster. When it was cool enough I added the culture and 1 c of starter. I believe it brewed 7/8 days and then when I drank it, it had been bottled 7/8 days. I just poured some of the raspberry and it is fizzy, seems darker in color, and a bit more tasty. I don't know how that is possible in a day. I am brewing in a 2 qt jar. Some people do get immense carbonation in one day. for many others it takes a while longer.. Up to a week or more for my own ferment. I use really sturdy bottles and they ferment in plastic cooler, so if they were to blow up not much damage except lost wonder-brew .. Even after a week of double ferment , in my case, I rarely have volcano-type carbonation ... A friend of mine using the exact same culture ( I gave it to her) and tea, (I shared my teas with her) has immense carbonation after 3 days , in fact out of the fermenting vessel her brews are already fizzy, mine are not .. Different micro-organisms make-ups in our brewing environments ... So be patient. I think your recipe is fine .. Not much I would change .. I would make more though .. Again Patience..
